Brussels sprouts are a staple in my household, especially during the chillier months. I find them to be so hearty and comforting, and I just love the way they crisp up in the oven.  Typically, I just add some avocado oil and salt to my Brussels, but I thought it would be fun to spice them up with some Indian flavors!

Let’s talk nutrition. Brussels sprouts are part of the Brassicas family of vegetables. Brassicas are so beneficial for immune function, they have anti-cancer properties, they promote gut health, they support blood-sugar balance, and they promote vascular health! Brassicas include Brussels sprouts, broccoli, cabbage, cauliflower, collard greens, kale, and arugula. They are veggie all-stars that you can try to add to your plates daily!

Indian-Spiced Brussels Sprouts

Ingredients:
•2 lb Brussels sprouts, stem removed and halved
•2-3 TBSP olive or avocado oil (I never measure, just make sure the sprouts are well coated)
•1/2 tsp granulated garlic
•1/2 tsp turmeric
•1/2 tsp onion powder
•1/2 tsp ground ginger
•1 tsp curry powder
•1 tsp cumin
•1 tsp kosher salt
•1/2 tsp black pepper

Instructions
1. Preheat oven to 400. In a large mixing bowl, toss Brussels with oil and spices
2. Spread Brussels evenly on a large baking sheet (may need to use 2 sheets) and make sure they are not over-crowded. Spacing them out more will allow for better browning (aka sweeter more delicious flavor and crispier texture)
3. Bake until browned, about 20-25 mins, tossing halfway through
